Finding the perfect chicken salad recipe can be quite the task. That’s why I’ve worked very hard to develop my personal recipe for you today. Not to boast, but I think it’s the best chicken salad I have ever had—and healthy too! This chicken salad with a twist is already great by itself, but I’ve found that it truly shines when made a main dish in wrap form.

In fact, these scrumptious little wraps are probably my current favorite lunch. They’re so tasty and easy to make, I eat them at least a couple of times a week. And with no guilt, thanks to the all the nutritious ingredients.

In fact, I often double the recipe when making the chicken salad filling so I can stash extra containers of it in my fridge for later. It makes an amazing, quick snack!

Also, to lighten things up, I make my chicken salad with probiotic-rich Greek yogurt instead of heavy mayo. And I add shredded Brussels sprouts and crunchy grapes in with the chicken for a lovely texture and flavor balance.

The Brussels sprouts, by the way, also add a healthy dose of antioxidant polyphenols. Not to mention, they’re rich in fiber to keep you full all day and keep your digestion healthy. Without further delay, here is that yummy recipe:

Curried Chicken Salad Wrap Recipe

3/4 lb cooked chicken breast, diced (or cubed tofu)

1⁄2 red onion, diced

1⁄4 cup red grapes, sliced

3⁄4 cup greek yogurt

1 teaspoon curry powder

Juice of 1 lemon

1⁄2 cup shredded brussels sprouts

Salt and pepper to taste

Butter lettuce leaves, to serve

Cubed apples, to serve

Instructions:

1. Add all ingredients (except lettuce leaves and cubed apples) to a mixing bowl, and stir to combine. Taste, and adjust seasoning to your liking.

2. Spoon the mixture onto individual lettuce leaves, and top the resulting “lettuce leaf wraps” with cubed apples.

3. Dig in!
