Cookie

  • 1½ cups fine ground almond flour
  • 1/3 cup cocoa powder
  • 1/3 cup 1:1 sugar replacer (like Swerve sweetener or erythritol blend)
  • 1 tsp baking powder
  • ¼ tsp sea salt
  • 2 whole eggs
  • 2 Tbsp softened butter

Mint-Chocolate Coating

  • 12 oz sugar free chocolate ( Lily’s)
  • ¼ tsp peppermint extract

Instructions

  1. In a mixing bowl, cream butter and 1:1 sugar replacer. Add remaining ingredients and mix until uniform dough is formed.

  3. On a lightly greased baking sheet, roll out dough until about ½” thick. Using a 2½” circular cookie cutter, carefully cut cookies out and place on a lined baking sheet. If dough becomes too soft, place the sheeted cookie dough into the freezer for 10 – 15 minutes.
  4. Bake cookies at 300 degrees F for about 20 – 30 minutes. After baking, allow cookies to cool to room temperature (about 1 – 2 hours).
  5. Melt chocolate and whisk peppermint extract into melted chocolate. Using a fork, gently dip cookies into chocolate mixture and place on a linked baking sheet. Allow dipped cookies to cool in the refrigerator until chocolate hardens (30 – 40 minutes).
  6. Store in the refrigerator in a sealed container and enjoy.
